Picnic Loaf

A while back I saw this in a magazine and decided it might be a nice dinner to make. To make the picnic loaf is easy enough, for a recipe go here.

You pretty much hollow out a cob loaf, fill it with your favourite food (I chose capsicum, pumpkin, salami, smoked ham, danish feta, mushrooms and eggplant), put the lid back on, cover it in al-foil and bake for 30mins. It makes heaps of food and was great for lunch the next day. Next time I make it, I might just have to take kim on a picnic.
